Tuna Avo Chickpea Salad

Today we have another one of my 'Strange but Good' creations, if you haven't checked out Sprint2TheTable's series for these recipes, I highly recommend it. I'm always creating the weirdest food creations...it's nice to find a home for these types of things.

Ingredients//

Drink -
  • Mix pure coconut water w/ Chi Mineral Water for a sweet and carbonated healthy refreshing drink - it's honestly the perfect combo!
Base -
  • 1 cup mashed cauliflower
  • 2 cups spinach leaves (can you tell these are my fav type of leaf?...lettuce?)
Toppings -
  • 1/2 a tomato
  • 3 tbsp garlic lemon hummus'
  • 1/2 an avocado cut into slices
  • 3 tbsp greek yogurt
  • 1/3-1/4 cup chickpeas
  • sriracha
  • can of greenseas mine & cracked pepper tuna 99% fat free
Directions//
  • Put down the two base ingredients
  • Arrange toppings as you'd like

Salad's are yours for the taking, get creative with them and throw in a bunch of random stuff...whether that's all your fav fruits with some veggies, your fav veggies with some fruits, yogurts, herbs, meats, try whatever. There is no right way to make a salad so go on toss it!
inappropriate.

Hope you enjoy!

  1. Hee hee. I love this tossed salad. :)

Seriously though, the flavor combo here is awesome and I love all the creaminess you get with the yogurt and avocado. Thanks for linking up!

  2. I love "everything goes" salads! I'm not a big fan of the leafy green part, haha, so I'm ALL about the toppings--especially if avocado is involved!
