Let's get weird, with muffins.

Woke up to a text from my mom, "Hope your good. Humpy for you **three camel emojis**" It's only Tuesday in America, but it's good to see my mom is keeping the hump-day text tradition alive even with the time difference. She recently got an iphone so she's having fun exploring all the fun emojis, and apps...my grandma even has an iphone..not to mention a facebook, her own website, AND a promotional youtube for her art. Had to throw that out there, I'm thankful my family is able to keep in touch with me...all ways possible.

But let's get back to my time zone shall we, it's Wednesday here and yep, time for another WIAW. I love seeing what others have for lunch, it's interesting who doesn't? Not sure what WIAW is all about? I remember when I first discovered the fitness, food blogging world everyone was talking about WIAW and I was so confused....well be confused no more people, check out my intro post to get in on the WIAW action here. M1: Toast w/almond butter & honey, celery and yes, more almond butter, and peanut butter. 2 hard-boiled eggs not pictured aaand a confession:: I am a nut-butter addict.

M2: 12 raw almonds (no way did I count them out, its a guess!) and a banana
M3: Salad, wasn't too stoked on it, but I added some kale in it this time and it really added some good new flavor, put some Italian rice bran oil and those two really spiced it up nicely! Also had some leftover black beans, and corn from my breakfast burrito over the weekend::

M5: This is last night's dinner:: eggs are so my "go-to" quick meal. I had 2 slices of dark rye toast with 3 hard-boiled eggs, some tomatoes and avocado left over from last night's dinner. We hosted a BBQ tonight so I decided to feature last nights din....so would that technically be today for you?

Get resourceful when it comes to food making! DO what works for you....get creative:: use left-overs, combine things...go nuts!

I Had some left overs, (see resourceful) that I wanted to use up but didn't really want to eat them separately and I needed something for my pre-workout snack sooooo I went for it, put on my white lab coat and went to town. (got creative)

Ingredients//
  • mashed cauliflower- 5 florets (estimate)
  • mashed sweet potato- 1.5 medium sized (estimate) - they were leftovers remember ;)
  • 1 tsp all spice
  • 1 tsp. baking powder
  • 1 tbsp cinnamon
  • 2 scoops vanilla whey protein powder
Directions//
  1. Literally....one step:: put everything into one big bowl, stir around & mix it well, cross your fingers! (wait, that's just what I did) Put batter into mini muffin tins and BOOM donezo!
  2. Enjoy...OK okkk two steps.
My random amounts of leftovers made 14 mini muffs.

  1. Sweet Potato!!! I was going to guess that but then it seemed to obvious... but the CAULIFLOWER was the twist. OMG. I love this!!! Strange but good, for the win!!!

  2. I am so intrigued by those muffins, I kind of think i will have to try them this weekend when I buy the ingredients. I may even bake them in my mini donut maker. such a good idea!

  7. What temperature and how long do you bake them??

    1. 350 degrees for 15-20 minutes, check half way and poke with a fork- if it's close to coming out clean- you know their almost done
